Ingredients
  

Pasta and Chicken
  • 8 oz penne pasta or any pasta of choice
  • 2 cups cooked chicken breast diced or shredded
  • 1 cup romaine lettuce chopped
Dressing
  • 1/2 cup Caesar dressing store-bought or homemade
  • 1/4 cup parmesan cheese grated
  • 1 tbsp lemon juice freshly squeezed
Toppings
  • 1/2 cup croutons for crunch
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente.
  2. Drain the pasta and rinse under cold water to cool. Set aside.
Grill the Chicken
  1. Preheat the grill or grill pan over medium-high heat.
  2. Season the chicken breast with salt and pepper. Grill for about 6-7 minutes on each side or until fully cooked. Remove from heat and let it rest before dicing.
Prepare the Salad
  1. In a large mixing bowl, combine the cooked pasta, diced chicken, and chopped romaine lettuce.
  2. In a separate bowl, whisk together the Caesar dressing, parmesan cheese, and lemon juice.
  3. Pour the dressing over the pasta mixture and toss to combine.
Serve
  1. Transfer the salad to a serving bowl. Top with croutons and chopped parsley for garnish.
  2. Serve immediately or refrigerate for up to an hour before serving.

Notes
