Method
Cook the Pasta
- Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente.
- Drain the pasta and rinse under cold water to cool. Set aside.
Grill the Chicken
- Preheat the grill or grill pan over medium-high heat.
- Season the chicken breast with salt and pepper. Grill for about 6-7 minutes on each side or until fully cooked. Remove from heat and let it rest before dicing.
Prepare the Salad
- In a large mixing bowl, combine the cooked pasta, diced chicken, and chopped romaine lettuce.
- In a separate bowl, whisk together the Caesar dressing, parmesan cheese, and lemon juice.
- Pour the dressing over the pasta mixture and toss to combine.
Serve
- Transfer the salad to a serving bowl. Top with croutons and chopped parsley for garnish.
- Serve immediately or refrigerate for up to an hour before serving.
