Ingredients
  

Chicken and Avocado
  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 medium ripe avocado Mashed.
  • 1 teaspoon lime juice Freshly squeezed.
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Sandwich Assembly
  • 8 slices whole grain bread Or your preferred bread.
  • 1 cup cheddar cheese, shredded Or any cheese of your choice.
  • 2 tablespoons butter For grilling.

Method
 

Prepare Chicken Avocado Mixture
  1. In a mixing bowl, combine the shredded chicken, mashed avocado, lime juice, salt, and black pepper. Mix until well combined.
  2. Set aside the chicken avocado mixture.
Assemble Sandwiches
  1. Spread butter on one side of each slice of bread.
  2. On the unbuttered side, spread a generous amount of the chicken avocado mixture.
  3. Top with shredded cheddar cheese and another slice of bread, buttered side up.
Grill Sandwiches
  1. Heat a grill or grill pan over medium heat.
  2. Place the sandwiches on the grill and cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  3. Remove from heat and let cool for a minute before slicing in half.
