Ingredients
  

Chicken and Broccoli
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 cups broccoli florets fresh or frozen
  • 1 tbsp olive oil for cooking
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Orzo and Sauce
  • 1 cup orzo pasta uncooked
  • 4 cups chicken broth low sodium
  • 1 cup heavy cream for creaminess
  • 1 cup shredded cheddar cheese plus more for topping
  • 1 tsp garlic powder
  • 1 tsp onion powder

Method
 

Cook the Chicken and Broccoli
  1. In a large pot, heat olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
  2. Add the broccoli florets to the pot and sauté for another 2-3 minutes until they are bright green and tender-crisp.
Prepare the Orzo
  1. Stir in the orzo pasta and chicken broth. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 10-12 minutes, or until the orzo is tender.
Make it Cheesy
  1. Once the orzo is cooked, stir in the heavy cream, garlic powder, onion powder, and cheddar cheese. Mix until the cheese is melted and the sauce is creamy.
  2. Taste and adjust seasoning if necessary. Serve hot, topped with additional cheese if desired.
