Ingredients
  

Dough
  • 2 cups all-purpose flour plus extra for dusting
  • 1 packet instant yeast about 2 1/4 teaspoons
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup milk warm
  • 1/4 cup unsalted butter melted
  • 1 large egg
Filling
  • 1 cup grated carrots packed
  • 1/2 cup brown sugar packed
  • 1 tablespoon ground cinnamon
  • 1/4 cup chopped walnuts optional
  • 1/4 cup raisins optional
Frosting
  • 4 oz cream cheese softened
  • 1/4 cup unsalted butter softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare the Dough
  1. In a mixing bowl, combine flour, yeast, sugar, and salt. Mix well.
  2. In another bowl, whisk together warm milk, melted butter, and egg.
  3. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  4. Knead the dough on a floured surface for about 5 minutes until smooth.
  5. Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
Make the Filling
  1. In a bowl, combine grated carrots, brown sugar, cinnamon, walnuts, and raisins.
Assemble the Rolls
  1. Preheat the oven to 350°F (175°C).
  2. Roll out the dough on a floured surface into a rectangle about 1/4 inch thick.
  3. Spread the filling evenly over the dough.
  4. Roll the dough tightly from one long side to the other and cut into 1-inch slices.
  5. Place the rolls on a greased baking sheet and let rise for another 30 minutes.
Bake the Rolls
  1. Bake the rolls in the preheated oven for 20-25 minutes until golden brown.
  2. While baking, prepare the frosting by mixing cream cheese, butter, powdered sugar, and vanilla until smooth.
  3. Once the rolls are done, let them cool slightly before drizzling with frosting.

Notes
