Method
Cook the Chicken
- In a large skillet, heat olive oil over medium heat. Add the chicken pieces and sprinkle with Cajun seasoning. Cook until browned and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
Sauté the Vegetables
- In the same skillet, add the diced onion and red bell pepper. Sauté for about 3-4 minutes until softened.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
Cook the Orzo
- Pour in the chicken broth and bring to a boil. Stir in the orzo pasta and reduce heat to a simmer. Cover and cook for about 10-12 minutes until the orzo is tender.
- Stir in the cooked chicken and thawed peas, cooking for an additional 2-3 minutes until heated through.
Serve
- Remove from heat and garnish with chopped parsley. Serve with lemon wedges on the side.
