Cajun Chicken Orzo

Ingredients
  

Chicken and Seasoning
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 tbsp Cajun seasoning store-bought or homemade
  • 1 tbsp olive oil for cooking
Vegetables
  • 1 medium onion diced
  • 1 medium red bell pepper diced
  • 2 cloves garlic minced
  • 1 cup chicken broth low-sodium preferred
  • 1 cup orzo pasta uncooked
  • 1 cup frozen peas thawed
Garnish
  • 2 tbsp fresh parsley chopped

Method
 

Cook the Chicken
  1. In a large skillet, heat olive oil over medium heat. Add the chicken pieces and sprinkle with Cajun seasoning. Cook until browned and cooked through, about 5-7 minutes.
  2. Remove the chicken from the skillet and set aside.
Sauté the Vegetables
  1. In the same skillet, add the diced onion and red bell pepper. Sauté for about 3-4 minutes until softened.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
Cook the Orzo
  1. Pour in the chicken broth and bring to a boil. Stir in the orzo pasta and reduce heat to a simmer. Cover and cook for about 10-12 minutes until the orzo is tender.
  2. Stir in the cooked chicken and thawed peas, cooking for an additional 2-3 minutes until heated through.
Serve
  1. Remove from heat and garnish with chopped parsley. Serve with lemon wedges on the side.

Notes

For a spicier dish, add cayenne pepper to taste. This dish can be easily adapted with different vegetables or proteins.
