Method
Prepare the Peppers
- Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
- Place the peppers upright in a baking dish.
Make the Filling
- In a mixing bowl, combine the shredded chicken, buffalo sauce, garlic powder, onion powder, salt, and black pepper. Mix well.
Stuff the Peppers
- Spoon the buffalo chicken mixture into each bell pepper until they are filled.
Bake
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes until the peppers are tender.
Serve
- Remove from the oven, garnish with chopped green onions and drizzle with dairy-free ranch dressing if desired. Serve hot.
