Ingredients
  

Stuffed Peppers
  • 4 pieces bell peppers any color
Filling
  • 2 cups cooked shredded chicken use rotisserie chicken for convenience
  • 1/2 cup buffalo sauce choose a dairy-free brand
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper
Topping
  • 1/4 cup green onions chopped, for garnish
  • 1/4 cup dairy-free ranch dressing optional, for drizzling

Method
 

Prepare the Peppers
  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  2. Place the peppers upright in a baking dish.
Make the Filling
  1. In a mixing bowl, combine the shredded chicken, buffalo sauce, garlic powder, onion powder, salt, and black pepper. Mix well.
Stuff the Peppers
  1. Spoon the buffalo chicken mixture into each bell pepper until they are filled.
Bake
  1. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes until the peppers are tender.
Serve
  1. Remove from the oven, garnish with chopped green onions and drizzle with dairy-free ranch dressing if desired. Serve hot.
