Cook the Rice
- In a pot or rice cooker, combine brown rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 40-45 minutes until rice is tender and water is absorbed.
Prepare the Chicken
- In a large skillet over medium heat, add the chicken pieces. Season with garlic powder, onion powder, salt, and pepper. Cook for about 5-7 minutes until chicken is browned.
- Pour in the buffalo sauce and stir to coat the chicken. Cook for an additional 10-15 minutes until chicken is cooked through and sauce is heated.
Assemble the Bowls
- In serving bowls, layer cooked rice, buffalo chicken, cherry tomatoes, shredded lettuce, diced cucumber, and drizzle with ranch dressing. Top with sliced green onions.
