Ingredients
  

Chicken and Seasoning
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1/2 cup buffalo sauce adjust to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
Rice Base
  • 1 cup brown rice or white rice
  • 2 cups water
Toppings
  • 1 cup cherry tomatoes halved
  • 1 cup shredded lettuce
  • 1 cup cucumber diced
  • 1/2 cup ranch dressing or blue cheese dressing
  • 1/4 cup green onions sliced

Method
 

Cook the Rice
  1. In a pot or rice cooker, combine brown rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 40-45 minutes until rice is tender and water is absorbed.
Prepare the Chicken
  1. In a large skillet over medium heat, add the chicken pieces. Season with garlic powder, onion powder, salt, and pepper. Cook for about 5-7 minutes until chicken is browned.
  2. Pour in the buffalo sauce and stir to coat the chicken. Cook for an additional 10-15 minutes until chicken is cooked through and sauce is heated.
Assemble the Bowls
  1. In serving bowls, layer cooked rice, buffalo chicken, cherry tomatoes, shredded lettuce, diced cucumber, and drizzle with ranch dressing. Top with sliced green onions.

Notes
