Prepare the Chicken
- In a mixing bowl, combine the brown sugar, pineapple juice, soy sauce, garlic powder, ginger powder, and black pepper. Mix well.
- Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let it marinate for at least 15 minutes.
Cook the Chicken
- Heat olive oil in a skillet over medium heat. Remove chicken from marinade, reserving the marinade for later.
- Add the chicken to the skillet and cook for about 5-7 minutes on each side until browned and cooked through.
- Pour the reserved marinade into the skillet along with the pineapple chunks. Bring to a simmer and cook for an additional 5-10 minutes until the sauce thickens.
Serve
- Remove from heat and garnish with chopped green onions. Serve hot over rice or with a side of vegetables.
