Ingredients
  

Chicken
  • 1.5 pounds boneless chicken thighs skinless preferred
Sauce
  • 1/2 cup brown sugar packed
  • 1/2 cup pineapple juice preferably fresh
  • 1 cup pineapple chunks canned or fresh
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1/2 teaspoon black pepper freshly ground
Garnish
  • 2 tablespoons green onions chopped

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine the brown sugar, pineapple juice, soy sauce, garlic powder, ginger powder, and black pepper. Mix well.
  2. Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let it marinate for at least 15 minutes.
Cook the Chicken
  1. Heat olive oil in a skillet over medium heat. Remove chicken from marinade, reserving the marinade for later.
  2. Add the chicken to the skillet and cook for about 5-7 minutes on each side until browned and cooked through.
  3. Pour the reserved marinade into the skillet along with the pineapple chunks. Bring to a simmer and cook for an additional 5-10 minutes until the sauce thickens.
Serve
  1. Remove from heat and garnish with chopped green onions. Serve hot over rice or with a side of vegetables.

Notes
