Brie, Fig, and Apple Grilled Cheese

A gourmet twist on the classic grilled cheese sandwich with creamy brie, sweet fig, and crisp apple.

Ingredients
  

  • 1 tablespoon olive oil
  • 1/4 cup red onion sliced
  • 4 slices sourdough bread
  • 2 tablespoons soft butter for brushing the bread
  • 4 tablespoons fig butter or jam
  • 5 ounces brie cheese thinly sliced
  • 1 large Granny Smith apple thinly sliced
  • 1/2 cup baby arugula

Method
 

  1. Heat the olive oil in a small skillet over medium heat. Add the sliced red onions and stir occasionally until they soften and caramelize, about 5 minutes. Remove from heat and set aside.
  2. Spread soft butter on one side of each slice of sourdough bread. On the unbuttered side, spread a layer of fig butter or jam.
  3. Layer the brie cheese, sliced Granny Smith apples, caramelized onions, and baby arugula on two of the slices, then top with the remaining slices of bread.
  4. Heat a large nonstick skillet over medium-high heat. Place the sandwiches in the pan butter-side down and cook for 2-3 minutes on each side until crispy and golden brown.
  5. Cut the sandwiches in half if desired and serve immediately while hot and melty.
