Start with your ground beef in a large mixing bowl. Add in the plain bread crumbs, eggs, diced bell pepper, jalapeño, and onions. Sprinkle in the onion powder, garlic powder, all-purpose seasoning, milk, Worcestershire sauce, salt, and pepper. Use your hands or a spatula to mix everything together until just combined. Be careful not to overmix; you want it to stay tender!
Once your mixture is well-combined, it's time to shape your meatloaf. Grab a baking sheet or a loaf pan and gently shape the meat mixture into a loaf shape if using a baking sheet. If using a loaf pan, press it firmly into the pan so it holds its shape during cooking.
In a separate bowl, mix together the apricot jam, dark brown sugar, sriracha, bourbon, BBQ sauce, and water. Stir until all ingredients are well blended. Set aside some of this glaze for brushing on top later.
Preheat your oven to 350°F (175°C). Once preheated, place your shaped meatloaf in the oven and bake for about 60 minutes. After this initial cooking time, brush some of that delicious bourbon glaze over the top of the meatloaf. Return it to the oven and bake for an additional 15-20 minutes until cooked through and caramelized on top.
To ensure your meatloaf is fully cooked without being dry, use a meat thermometer to check that it has reached an internal temperature of 160°F (70°C).
Once out of the oven, let your beefy masterpiece rest for about 10-15 minutes before slicing. This allows the juices to redistribute throughout the meatloaf ensuring every bite is moist and flavorful.
After resting, slice up your bourbon-glazed meatloaf and serve it warm with sides of your choice. Drizzle any remaining glaze over each slice for an extra kick of flavor.
