Ingredients
  

  • 2 cups blueberries
  • 2.5 cups peeled and sliced peaches (5-6 peaches)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 0.25 teaspoon vanilla extract
  • 0.5 cup granulated sugar
  • 0.25 cup all-purpose flour
  • 0.5 cup all-purpose flour for crumble topping
  • 0.5 cup old-fashioned oats
  • 0.33 cup brown sugar
  • 0.25 cup granulated sugar for crumble topping
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 6 tablespoons cold butter (diced)

Method
 

  1. Preheat your oven to 350 degrees F.
  2. In a large bowl, combine blueberries, peaches, lemon juice, lemon zest, vanilla extract, granulated sugar, and flour. Toss gently and let sit.
  3. In another bowl, mix flour, oats, brown sugar, granulated sugar, salt, and cinnamon. Mix in cold butter until crumbly.
  4. Pour the fruit mixture into a baking dish and spread evenly. Sprinkle the crumble topping over the fruit.
  5. Bake for 40 to 45 minutes until the top is browned and crisp.
