Prepare the Filling
- In a mixing bowl, combine the blueberries, softened cream cheese, sugar, and vanilla extract. Mix until well combined.
- Mash the blueberries slightly to create a chunky filling.
Assemble the Egg Rolls
- Lay an egg roll wrapper on a clean surface with a corner pointing towards you.
- Place about 2 tablespoons of the blueberry cream cheese filling in the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal. Use a little water to seal the top edge.
Fry the Egg Rolls
- In a frying pan, heat the vegetable oil over medium heat.
- Carefully add the egg rolls to the hot oil, frying in batches if necessary. Fry for about 2-3 minutes on each side or until golden brown.
- Remove the egg rolls and drain on paper towels.
Serve
- Dust the fried egg rolls with powdered sugar before serving.
