Ingredients
  

Filling
  • 1 cup blueberries fresh or frozen
  • 4 oz cream cheese softened
  • 2 tbsp sugar adjust to taste
  • 1 tsp vanilla extract
Egg Rolls
  • 8 pieces egg roll wrappers
  • 1 cup vegetable oil for frying
  • powdered sugar to taste for dusting

Method
 

Prepare the Filling
  1. In a mixing bowl, combine the blueberries, softened cream cheese, sugar, and vanilla extract. Mix until well combined.
  2. Mash the blueberries slightly to create a chunky filling.
Assemble the Egg Rolls
  1. Lay an egg roll wrapper on a clean surface with a corner pointing towards you.
  2. Place about 2 tablespoons of the blueberry cream cheese filling in the center of the wrapper.
  3. Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal. Use a little water to seal the top edge.
Fry the Egg Rolls
  1. In a frying pan, heat the vegetable oil over medium heat.
  2. Carefully add the egg rolls to the hot oil, frying in batches if necessary. Fry for about 2-3 minutes on each side or until golden brown.
  3. Remove the egg rolls and drain on paper towels.
Serve
  1. Dust the fried egg rolls with powdered sugar before serving.
  2. Serve warm and enjoy!
