Ingredients
  

  • 5 cups arugula
  • 1 cup blackberries
  • ¾ cup blueberries
  • 1 avocado, diced
  • cups cucumber, thinly sliced
  • cup feta cheese use vegan feta for a dairy-free option
  • cup toasted hazelnuts, chopped
  • cup extra-virgin olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon maple syrup or other liquid sweetener like agave or honey
  • 2 tablespoons finely chopped fresh mint
  • ¾ teaspoon salt
  • freshly cracked black pepper to taste

Method
 

  1. In a small bowl, whisk together extra-virgin olive oil, freshly squeezed lime juice, maple syrup, finely chopped fresh mint, salt, and black pepper. Adjust seasoning if needed.
  2. Gather 5 cups of arugula, 1 cup of blackberries, ¾ cup of blueberries, 1 diced avocado, and 1½ cups of thinly sliced cucumber.
  3. In a large mixing bowl, combine arugula, blackberries, blueberries, diced avocado, sliced cucumber, feta cheese, and chopped toasted hazelnuts.
  4. Drizzle the prepared lime mint vinaigrette over the salad and coat everything evenly.
  5. Gently toss everything together using two large spoons or salad tongs, being careful not to mash the avocado or break apart the berries.
  6. Serve immediately for the best texture and flavor.
