Ingredients
  

Salad Base
  • 4 cups broccoli florets fresh, chopped
  • 1 cup cherry tomatoes halved
  • 1 cup carrots shredded
  • 1/2 cup red onion finely chopped
  • 1/2 cup sunflower seeds unsalted
Dressing
  • 1/4 cup olive oil extra virgin
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup for vegan option
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the broccoli florets, cherry tomatoes, shredded carrots, red onion, and sunflower seeds.
  2. Toss the ingredients together until well mixed.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss to coat evenly.
  2. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
