Banana Oatmeal Bars

A deliciously wholesome snack that combines the sweetness of ripe bananas with hearty oats, perfect for breakfast or an afternoon pick-me-up.

Ingredients
  

  • 2 cups rolled oats
  • cup honey or pure maple syrup
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Combine the mashed bananas with rolled oats, honey or maple syrup, eggs, baking powder, and vanilla extract. Stir until well combined.
  4. Grease an 8×8-inch baking dish or line it with parchment paper.
  5. Pour the banana-oat mixture into the prepared baking dish and spread it evenly.
  6. Bake for about 25-30 minutes until golden brown and a toothpick inserted in the center comes out clean.
  7. Let the bars cool for at least ten minutes before slicing into squares.
