Ingredients
  

Pasta
  • 12 oz Penne pasta or any pasta of choice
Vegetables
  • 1 cup Cherry tomatoes halved
  • 1 cup Spinach fresh
  • 1 cup Zucchini diced
  • 1 cup Bell pepper diced
Cheese
  • 1 cup Feta cheese crumbled
  • 1 cup Mozzarella cheese shredded
Sauce
  • 2 cups Marinara sauce store-bought or homemade
  • 2 tbsp Olive oil for sautéing
  • 1 tsp Oregano dried
  • 1 tsp Basil dried
  • 1 clove Garlic minced

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Sauté the Vegetables
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add zucchini, bell pepper, and cherry tomatoes. Cook for 5-7 minutes until vegetables are tender. Stir in spinach and cook until wilted.
Combine Ingredients
  1. In a mixing bowl, combine the cooked pasta, sautéed vegetables, marinara sauce, oregano, and basil. Mix well.
Assemble and Bake
  1. Preheat the oven to 375°F (190°C). Transfer the pasta mixture to an oven-safe baking dish. Top with crumbled feta and shredded mozzarella cheese. Bake for 20-25 minutes until the cheese is bubbly and golden.
Serve
  1. Remove from the oven and let cool for a few minutes before serving. Enjoy your baked Mediterranean pasta!
