Ingredients
  

Egg Mixture
  • 8 large eggs beaten
  • 1 cup cottage cheese preferably low-fat
  • 1 cup spinach fresh, chopped
  • 1 cup bell pepper diced
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Toppings
  • 1 tablespoon chives chopped, for garnish
  • 1 tablespoon olive oil for greasing the baking dish

Method
 

Prepare the Oven
  1. Preheat the oven to 375°F (190°C).
Mix Ingredients
  1. In a mixing bowl, combine the beaten eggs, cottage cheese, spinach, bell pepper, shredded cheese, salt, and black pepper.
Prepare Baking Dish
  1. Grease a baking dish with olive oil.
Bake
  1. Pour the egg mixture into the greased baking dish and spread evenly.
  2. Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the top is golden.
Serve
