Ingredients
  

  • 2 pounds 80/20 ground chuck
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 6-9 slices American cheese
  • 1 pound bacon, chopped for the bacon jam
  • 1 white onion diced for the bacon jam
  • 4 cloves garlic, minced for the bacon jam
  • 1/2 cup brown sugar for the bacon jam
  • 1/4 cup bourbon for the bacon jam
  • 1/4 cup apple cider vinegar for the bacon jam
  • 1/2 cup maple syrup for the bacon jam
  • 1 tablespoon Wagyu tallow or cooking spray for cooking

Method
 

  1. Flatten the ground chuck in a baking pan and season with salt, black pepper, and garlic powder. Refrigerate while making bacon jam.
  2. Cook chopped bacon in a skillet until crispy. Remove bacon, sauté diced onion in the rendered grease, then add minced garlic. Return bacon and mix in brown sugar, bourbon, apple cider vinegar, and maple syrup. Simmer until thickened.
  3. Cook the seasoned patties on a griddle or skillet, searing for 4-6 minutes on one side. Flip, add cheese, and cook for 2 more minutes until melted.
  4. Toast slider buns on the griddle or skillet until golden brown.
  5. Assemble sliders by placing patties on buns and topping with bacon jam.
