Ingredients
  

Salad Base
  • 2 cups mixed greens such as spinach and arugula
  • 1 cup cooked chicken breast sliced or shredded
  • 1/2 cup dried cranberries
  • 1/4 cup sliced almonds toasted
  • 1 medium cucumber sliced
  • 1 medium carrot shredded
Dressing
  • 3 tablespoons soy sauce low sodium
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon fresh ginger grated
  • 1 clove garlic minced

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat.
  2. Season the chicken breast with salt and pepper.
  3. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
  4. Remove from grill and let it rest for 5 minutes before slicing.
Make the Dressing
  1. In a mixing bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic until well combined.
Assemble the Salad
  1. In a large salad bowl, combine mixed greens, sliced chicken, cranberries, almonds, cucumber, and carrot.
  2. Drizzle the dressing over the salad and toss gently to combine.
  3. Serve immediately.
