Ingredients
  

Cheesecake Filling
  • 16 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs room temperature
  • 1 cup sour cream for creaminess
Apple Filling
  • 4 cups apples peeled, cored, and sliced
  • 1 cup brown sugar packed
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
Crisp Topping
  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1 teaspoon salt

Method
 

Prepare the Cheesecake
  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, beat the cream cheese and granulated sugar until smooth.
  3. Add the vanilla extract and mix well.
  4. Add the eggs one at a time, mixing on low speed until just combined.
  5. Stir in the sour cream until smooth.
  6. Pour the cheesecake filling into the prepared springform pan.
Prepare the Apple Filling
  1. In a separate bowl, combine the sliced apples, brown sugar, cinnamon, and lemon juice.
  2. Spread the apple mixture evenly over the cheesecake filling.
Prepare the Crisp Topping
  1. In another bowl, mix together the oats, flour, brown sugar, melted butter, and salt until crumbly.
  2. Sprinkle the crisp topping over the apple layer.
Bake the Cheesecake
  1. Bake in the preheated oven for 60 minutes, or until the center is set.
  2. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  3. Refrigerate for at least 4 hours before serving.
