Prepare the Cheesecake
- Preheat the oven to 325°F (163°C).
- In a mixing bowl, beat the cream cheese and granulated sugar until smooth.
- Add the vanilla extract and mix well.
- Add the eggs one at a time, mixing on low speed until just combined.
- Stir in the sour cream until smooth.
- Pour the cheesecake filling into the prepared springform pan.
Prepare the Apple Filling
- In a separate bowl, combine the sliced apples, brown sugar, cinnamon, and lemon juice.
- Spread the apple mixture evenly over the cheesecake filling.
Prepare the Crisp Topping
- In another bowl, mix together the oats, flour, brown sugar, melted butter, and salt until crumbly.
- Sprinkle the crisp topping over the apple layer.
Bake the Cheesecake
- Bake in the preheated oven for 60 minutes, or until the center is set.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Refrigerate for at least 4 hours before serving.
