Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Apple Cider Sauce
  • 1 cup apple cider preferably fresh
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons honey optional for sweetness
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Vegetables
  • 1 cup onion, chopped
  • 2 cups carrots, sliced
  • 2 cups celery, sliced
Oil
  • 2 tablespoons olive oil

Method
 

Prepare the Chicken
  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat.
Cook the Chicken
  1. Add the chicken to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through.
Make the Sauce
  1. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add onion, carrots, and celery; sauté until softened, about 5 minutes.
  3. Pour in the apple cider, apple cider vinegar, and honey; stir to combine.
Combine and Simmer
  1. Return the chicken to the skillet, cover, and let simmer for 15 minutes, allowing the flavors to meld.
Serve
  1. Serve the chicken with the apple cider sauce and vegetables on the side.
