  • 1 large sweet potato (about 12 ounces), diced into 1-inch pieces
  • 1 lb flat iron steak, diced into 1-inch pieces
  • 3 tbsp olive oil (divided)
  • 2 cloves garlic, minced
  • 2 bell peppers (any color), diced into 1-inch pieces
  • 4 green onions, thinly sliced
  • 2 tbsp coconut aminos
  • Sea salt and cracked black pepper to taste

Instructions

  1. Microwave the diced sweet potatoes with salt for about 4-6 minutes until just tender.
  2. Heat two tablespoons of olive oil in a skillet over high heat. Add the steak in a single layer and cook until browned on all sides (about 10 minutes). Remove from skillet.
  3. In the same skillet, add another tablespoon of olive oil and sauté the sweet potatoes for about 3-4 minutes until they start to brown.
  4. Make a well in the center of the skillet; add minced garlic and sauté until fragrant (about one minute).
  5. Add bell peppers and green onions; cook for another 3-4 minutes until tender yet crisp.
  6. Return cooked steak to the skillet along with coconut aminos; toss everything together and cook for an additional minute.
  7. Season with cracked black pepper and serve warm.
