Ingredients

  • 1 1/2 cups brown lentils
  • 1 large white onion
  • 2 cloves garlic
  • 2 cans fire-roasted tomatoes with green chilies
  • Corn or flour tortillas (12)
  • Lime juice
  • Jalapeños

Instructions

  1. In a large pot, combine brown lentils, vegetable broth, diced onion, garlic, and jalapeño. Bring to a boil and simmer for about 25 minutes until lentils are tender. Stir in tomatoes and taco seasoning; cook for another 5 minutes.
  2. Preheat air fryer or oven to 400°F (200°C). Spoon about 2 tablespoons of the lentil mixture onto each tortilla and roll tightly.
  3. Cook in the air fryer for 8–10 minutes or bake in the oven for 15–20 minutes until golden brown.
  4. Serve warm with salsa, jalapeños, and vegan sour cream.
