  • 1/2 cup raw cashews
  • 1/2 block firm tofu
  • 16 jumbo shells (regular or gluten-free)
  • 9 oz frozen spinach (thawed)
  • 16 oz marinara sauce
  • 2 tablespoons lemon juice
  • 1 tablespoon nutritional yeast
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons Califia Farms Oat Milk

Instructions

  1. Preheat your oven to 350°F.
  2. Soak cashews in boiling water for 10-15 minutes.
  3. Cook jumbo shells until al dente; drain and set aside.
  4. Blend soaked cashews, tofu, lemon juice, nutritional yeast, salt, pepper, and oat milk until smooth.
  5. Fold thawed spinach into the ricotta mixture.
  6. Spread half of the marinara sauce in a casserole dish. Fill each shell with the ricotta filling and arrange them in the dish. Top with the remaining sauce.
  7. Bake for 30 minutes until bubbly.
