  • 240g all-purpose flour (or gluten-free)
  • 2 tablespoons of caster sugar
  • 1 teaspoon of pumpkin spice
  • 220g dairy-free butter (cold and cut into small cubes)
  • Ice-water (as needed)
  • 100g pumpkin puree
  • 1 & 1/2 teaspoons pumpkin spice
  • 50g maple syrup
  • 2 teaspoons of cornstarch / cornflour
  • Dairy-free milk (as needed)
  • 100g icing sugar
  • 1 teaspoon of maple syrup
  • 1/2 teaspoon of pumpkin puree
  • 1/4 teaspoon of pumpkin spice

Instructions

  1. Prepare the dough by mixing flour, sugar, and pumpkin spice in a bowl. Add cold dairy-free butter and combine until crumbly. Gradually add ice water until the dough holds together. Chill for at least 30 minutes.
  2. For the filling, mix pumpkin puree, pumpkin spice, maple syrup, and cornstarch until smooth.
  3. Roll out the chilled dough and cut into rectangles. Spoon filling onto half of the rectangles, cover with remaining pieces, and seal edges.
  4. Bake at 180°C (350°F) for 20-25 minutes until golden brown.
  5. Meanwhile, prepare icing by whisking icing sugar with maple syrup and enough dairy-free milk to achieve desired consistency. Drizzle over cooled pop tarts before serving.
