  • 3/4 cup cold butter, cut into cubes
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces good quality semi-sweet baking chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips, divided
  • 3/4 cup coarsely chopped walnuts
  • (Optional) sea salt, for sprinkling

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together the all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. In a mixer, cream together cold butter and both sugars until creamy. Add the cold egg and vanilla extract; mix until combined.
  4. Gradually incorporate the dry mixture followed by chopped chocolate, chocolate chips, and walnuts until just combined.
  5. Scoop dough into large portions on lined baking sheets, pressing extra chocolate chips on top if desired.
  6. Bake for 12-13 minutes until golden brown at the edges; sprinkle with sea salt if desired.
  7. Cool for five minutes before transferring to wire racks.
