  • 1 tbsp olive oil
  • 4 salmon fillets
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 34 sun-dried tomatoes, sliced
  • 1/2 cup dry white grape juice
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach

Instructions

  1. Sear the Salmon: Pat the salmon fillets dry and season with salt and pepper. In a frying pan, heat olive oil and butter over medium-high heat. Cook the salmon skin-side up for about 6-7 minutes until golden brown. Remove from the pan.
  2. Prepare the Sauce: In the same pan, sauté garlic and sun-dried tomatoes for about 30 seconds. Add grape juice and simmer until reduced by half.
  3. Create Creaminess: Stir in heavy cream and Parmesan cheese until well combined. Add spinach until wilted, then return the salmon to the pan to simmer on low heat for another 5 minutes.
