  • 2 packs udon noodles
  • 200 g fresh beef, thinly sliced
  • 1 tbsp garlic, minced
  • 1 white onion, sliced
  • 3 tbsp dark soy sauce
  • 2 tsp fresh ground black pepper
  • Chinese cabbage (or leafy greens of your choice)
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • 1 tsp corn starch or potato starch + water (for slurry)
  • 1 tsp Chinese white rice vinegar
  • Salt to taste
  • Sugar to taste
  • 3 tbsp water
  • 1/2 tsp potato starch

Instructions

  1. Whisk together garlic, sesame oil, soy sauce, oyster sauce (if using), Chinese rice vinegar, and cornstarch slurry in a bowl. Marinade the beef for about 10 minutes.
  2. Cook udon noodles in boiling water for 1-2 minutes until tender but firm; drain and set aside.
  3. Combine marinade with dark soy sauce, black pepper, water, and potato starch to make the sauce.
  4. In a wok over medium heat, sauté garlic and onions until softened. Add marinated beef and stir-fry until browned (about 2-3 minutes). Pour in the sauce and cook until thickened.
  5. Toss cooked udon noodles and chopped cabbage into the wok to combine everything well.
