  • 1 stalk lemongrass, minced
  • 4 cups chicken broth
  • 3 (13.5 ounce) cans coconut milk
  • 0.5 pound fresh shiitake mushrooms, sliced
  • 1 pound medium shrimp – peeled and deveined (or chicken/tofu)
  • 2 tablespoons fresh lime juice
  • Salt to taste
  • 0.25 cup chopped fresh cilantro

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté ginger, red curry paste, and minced lemongrass for about 1 minute until fragrant.
  2. Gradually stir in chicken broth, fish sauce, and brown sugar. Lower heat and simmer for 15 minutes to meld flavors.
  3. Add coconut milk and sliced shiitake mushrooms; cook for an additional 5 minutes until mushrooms soften.
  4. Stir in shrimp (or alternative protein) and cook until pink and opaque, about 5 minutes. Finish with fresh lime juice.
  5. Season with salt to taste; garnish with chopped cilantro before serving.
