  • 3 medium shallots
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 pear
  • 1 lemon
  • ½ cup parsley
  • Freshly ground black pepper

  1. Peel, slice, and dice the pear. Toss with lemon juice to prevent browning.
  2. Heat a skillet over medium heat; cook turkey strips until golden brown. Remove and drain on paper towels.
  3. In the same skillet, sauté shallots for about one minute until softened. Stir in Dijon mustard.

  5. Turn off heat; gently fold in half of the turkey strips, parsley, and black pepper.
