  • 2 carrots, cut into bite-size pieces
  • 2 medium potatoes, cut into bite-size pieces
  • 1/2 yellow onion, diced
  • 2 chicken breasts, cubed
  • 2 tablespoons olive oil (or coconut/vegetable oil)
  • 2 teaspoons ground ginger
  • 2 teaspoons minced garlic
  • 1 jar (4 oz.) red curry paste
  • 2 cans coconut milk
  • 1/4 cup + 2 tablespoons peanut butter
  • Juice from 1 lime

Instructions

  1. In a large skillet or pot over medium-high heat, warm the olive oil. Sauté the diced onions, carrots, and potatoes for about 4-5 minutes until slightly softened.
  2. Add the cubed chicken along with ginger, garlic, and red curry paste. Cook for another couple of minutes until well-coated.
