- 10 oz ground chicken
- ÂĽ cup Tamari (low sodium) (or soy sauce or coconut aminos)
- 2 Tablespoon Thai sweet red chili sauce
- Juice of 1 lime
- 1 teaspoon maple syrup (or honey or agave)
- â…“ cup cashews (chopped – raw or roasted/salted)
- ÂĽ cup scallions (chopped)
- ÂĽ cup cilantro (fresh, chopped)
- ÂĽ–½ cup carrots (shredded)
- Sesame seeds (for topping)
- 1 head butter lettuce – leaves removed (rinsed and dried)
- Heat sesame oil in a pan over medium-high heat. Sauté diced onions until translucent.
- Add minced garlic and ginger; cook until fragrant.
- Stir in ground chicken, breaking it apart until fully cooked (about 3-4 minutes).
- In a bowl, mix tamari, chili sauce, lime juice, and maple syrup; pour over the chicken mixture along with chopped cashews.
- Cook on low for an additional 2 minutes before mixing in scallions, cilantro, and shredded carrots.
- Assemble wraps by spooning the filling into lettuce leaves and topping with sesame seeds.
