  • 1.21.4 kg (about 3 lbs) lamb shoulder
  • 2 tablespoons olive oil
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 5 sprigs rosemary
  • 68 cloves garlic
  • 2/3 cup apple vinegar
  • 1 cup water
  • 4 tablespoons honey

Instructions

  1. Preheat your oven to 180°C (356°F).
  2. Chop rosemary needles finely and slice garlic cloves lengthwise.
  3. Score the lamb shoulder's surface deeply and rub with olive oil, salt, pepper, smoked paprika, chopped rosemary, and tuck in garlic pieces.
  4. In a deep roasting pan, mix water and apple vinegar; place the lamb in the pan meat-side up and cover tightly with foil.
  5. Roast for approximately 2 hours and 15 minutes.
  6. Remove foil, drizzle honey over the lamb, and roast uncovered for an additional 30 minutes until golden brown.
  7. Let rest for 5-10 minutes before serving.
