  • 1 tablespoon vegetable oil (plus more for frying)
  • ½ small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 pound lean ground beef
  • 1 ½ teaspoons chili powder
  • 1 teaspoon kosher salt (plus more as needed)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon ground cumin
  • 16 corn tortillas
  • Mexican crema
  • Thinly shredded lettuce
  • Salsa
  • Chopped cilantro
  • Crumbled queso fresco

Instructions

  1. Boil diced potatoes in water for about 20 minutes until fork-tender. Drain and mash.
  2. Heat oil in a skillet over medium-high heat; sauté onion and garlic for 1-2 minutes.
  3. Add ground beef, cooking until browned. Season with chili powder, salt, garlic powder, onion powder, black pepper, and cumin.
  4. Stir in mashed potatoes until well combined; adjust seasoning as needed.
  5. Warm tortillas in the microwave wrapped in a damp paper towel.
  6. Fill each tortilla with 2-3 tablespoons of filling, fold, and repeat.
  7. Fry tacos in hot oil (350-375°F) for about 45 seconds per side until golden brown.
  8. Drain on paper towels and serve hot with your favorite toppings.
