  • 2/3 cup whole milk, warm (100 to 110F)
  • 1/4 cup sugar
  • 2 teaspoons active dry yeast
  • 2 1/2 cups all purpose flour
  • 1 large egg
  • 1 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 3 tbsp unsalted butter
  • 46 tbsp heavy cream
  • 4 tbsp brown or white sugar
  • 2 tbsp cocoa powder
  • 12 tsp instant coffee powder
  • 100g semi-sweet or dark chocolate, chopped
  • 1/4 cup heavy cream
  • 1 cup powdered sugar
  • 1/2 tsp instant coffee powder

Instructions

  1. In a bowl, warm 2/3 cup of whole milk (100-110°F) and combine it with 1/4 cup sugar and 2 teaspoons active dry yeast. Let it sit until frothy (about 5 minutes).
  2. In another bowl, whisk together 2 1/2 cups all-purpose flour and 1 teaspoon salt.
  3. Add the yeast mixture, 1 large egg, and 1/4 cup softened unsalted butter to the dry ingredients. Mix until combined and knead until smooth.
  4. Cover the dough with a cloth and let it rise in a warm place until doubled in size (about 1 hour).
  5. Prepare the filling by melting 3 tablespoons of unsalted butter with heavy cream, sugars, cocoa powder, instant coffee powder, and chopped chocolate until smooth. Let cool slightly.
  6. Roll out the dough into a rectangle (about ¼ inch thick) and spread the filling evenly over it. Roll tightly and slice into pieces.
  7. Place in a greased baking dish and let rise again for about 30 minutes while preheating the oven to 350°F (175°C). Bake for about 25 minutes or until golden brown.
  8. For icing, whisk together powdered sugar, heavy cream, and instant coffee until smooth; drizzle over rolls.
