  • 1/4 cup soy sauce (or tamari or coconut aminos)
  • 2 tablespoons extra virgin olive oil (or avocado oil)
  • 2 teaspoons garlic, minced
  • 1 teaspoon lemon juice
  • 2 cups grilled corn (approx. 34 cobs of corn)
  • 1/3 cup mayo
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh cilantro, chopped
  • 12 tablespoons lime juice
  • 1/2 tablespoon garlic, minced
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1/4 cup red onion, diced
  • 4 cups rice of your choice, cooked
  • black beans
  • cherry tomatoes, halved
  • jalapeño slices
  • lime wedges
  • additional fresh cilantro leaves
  • sour cream
  • 12 avocados, sliced

Instructions

  1. Marinate chicken in soy sauce, olive oil, garlic, and lemon juice for at least 15 minutes.
  2. Grill corn cobs until slightly charred (about 10 minutes).
  3. Prepare the street corn salad by mixing grilled corn with mayo, feta cheese, cilantro, lime juice, garlic, chili powder, paprika, salt, pepper, and diced red onion.
  4. Grill or pan-sear marinated chicken until fully cooked (about 6-7 minutes per side). Allow it to rest before slicing.
  5. Assemble bowls with a base of cooked rice topped with sliced chicken and generous servings of street corn salad. Add black beans, cherry tomatoes, jalapeño slices, lime wedges, avocado slices, and sour cream.
