  • 8 mini or Persian cucumbers
  • 1 green onion, finely sliced
  • 1 ½ tbsp low-sodium soy sauce
  • 1 ½ tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp honey or maple syrup
  • 2 large garlic cloves, minced
  • 1 tsp crushed red chili flakes
  • Sesame seeds for garnish

Instructions

  1. Wash and dry cucumbers. Cut off ends and slice diagonally at a 45° angle between chopsticks to create spirals. Halve the spirals and place in a mixing bowl.
  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey (or maple syrup), minced garlic, and chili flakes until well combined.
  3. Pour the dressing over the cucumbers and gently toss to coat. Garnish with green onion slices and sesame seeds before serving.
