  • ¼ cup lime juice
  • ½ tsp chili powder
  • 4 large tortillas
  • 1 cup uncooked rice
  • 1 small red bell pepper, diced
  • 1 jalapeño, diced
  • 1 cup black beans, drained and rinsed
  • ⅓ cup sour cream
  • 1½ Tbsp honey
  • ½1 Tbsp chipotle peppers in adobo
  • 3 Tbsp fresh cilantro, chopped
  • 12 Tbsp water
  • ¼ tsp salt
  • ½ tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp salt
  • 3 tbsp olive oil

Instructions

  1. Marinate the chicken: Combine chicken pieces with lime juice, spices, olive oil, and chipotle pepper. Let sit for at least 15 minutes.
  2. Cook rice according to package instructions.
  3. Prepare the sauce by blending sour cream, honey, chipotle peppers, lime juice, cilantro, water, and salt until smooth.
  4. In a skillet over medium heat, sauté marinated chicken until cooked through (about 12-15 minutes).
  5. In the same skillet, sauté bell pepper, jalapeño, onion, and garlic until softened (about 8 minutes).
  6. Warm tortillas briefly; layer rice, chicken, sautéed veggies, black beans, and drizzle with sauce before wrapping tightly.
