  • 1 lb ground chicken or turkey
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 36 oz evaporated milk or half-and-half
  • 12 oz cheese tortellini (fresh or dried)
  • 5 cups baby spinach
  • 4 cups broth (chicken or vegetable)

Instructions

  1. Combine the browned ground chicken/turkey, onion, carrots, celery, garlic, seasonings, and broth in your slow cooker.
  2. Set the slow cooker on low for 7-8 hours or high for 4 hours.
  3. After cooking, remove excess fat from the surface and whisk in cornstarch slurry and milk.
  4. Stir in tortellini and cook on high for an additional 45 minutes until tender.
  5. Add baby spinach during the last few minutes of cooking until wilted.
  6. Adjust consistency with extra milk if desired before serving warm.
