2 packs udon noodles
200 g fresh beef, thinly sliced
Chinese cabbage (or leafy greens of choice)
1 white onion, sliced
1 tbsp garlic, minced
1 tsp sesame oil
1 tbsp soy sauce
1 tsp vegetarian oyster sauce
1 tsp corn starch or potato starch + water (for slurry)
1 tsp Chinese white rice vinegar
3 tbsp dark soy sauce
2 tsp fresh ground black pepper
3 tbsp water
1/2 tsp potato starch
Instructions
Prepare the marinade by whisking together minced garlic, sesame oil, soy sauce, vegetarian oyster sauce, vinegar, and cornstarch slurry. Marinate the beef for 10 minutes.
Cook udon noodles in boiling water for 1-2 minutes until just loose; drain and set aside.
In a bowl, mix dark soy sauce, vegetarian oyster sauce, black pepper, water, and potato starch to make the black pepper sauce.
Heat oil in a wok over medium heat; stir-fry garlic and onions until softened. Add marinated beef and cook until browned.
Stir in the black pepper sauce until thickened; add cooked udon noodles and cabbage. Combine well and serve hot.
