- 1 large ripe mango, diced
- 1 large avocado, diced
- ½ cup red onion, thinly sliced
- 1 small cucumber, diced
- ½ cup edamame, cooked and shelled
- 2 tbsp olive oil
- Juice of 1 lime
- 2 garlic cloves, minced
- ½ tsp chili flakes (optional)
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
- 2 tbsp lime juice
- 1 tsp honey or maple syrup
- 1 tsp Dijon mustard
- Pinch of salt
- Cook rice according to package instructions; set aside.
- Sauté minced garlic in olive oil over medium heat until fragrant. Add shrimp seasoned with salt and pepper; cook until pink (about 3-4 minutes).
- Whisk together dressing ingredients: lime juice, honey (or maple syrup), Dijon mustard, and salt.
