Ingredients

Scale
  • 8 ounces pasta (fettuccine or linguine)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 pound fresh salmon fillet, skin removed
  • 4 cups fresh spinach, washed and roughly chopped
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste
  • ¼ teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook pasta in salted boiling water according to package instructions until al dente (about 8-10 minutes). Drain and set aside.
  2. Season salmon fillet with salt, pepper, and lemon juice. In a skillet over medium heat, cook the salmon for about 4-5 minutes on each side until fully cooked. Remove and flake into bite-sized pieces.
  3. In the same skillet, sauté minced garlic for 30 seconds until fragrant. Add chopped spinach and cook until wilted (2-3 minutes).
  4. Lower heat and stir in heavy cream and Parmesan cheese until melted and thickened. Add lemon zest, lemon juice, and optional red pepper flakes.
  5. Combine drained pasta with the creamy sauce, then gently fold in flaked salmon.
  6. Serve immediately topped with freshly chopped parsley.
