  • 2 salmon filets (46 oz each)
  • ½ lb asparagus (ends trimmed)
  • 1 lb baby potatoes (quartered)
  • 3 tbsp olive oil
  • ½ tbsp Dijon mustard
  • Salt and pepper (to taste)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • Juice of 1 lemon

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss quartered potatoes with 2 tablespoons olive oil and half of the seasoning mix; spread on one side of the baking sheet.
  3. Bake potatoes for about 8 minutes.
  4. Meanwhile, brush salmon filets with Dijon mustard and season with salt and pepper.
  5. After 8 minutes, push potatoes aside; add asparagus and salmon to the baking sheet.
  6. Drizzle everything with remaining olive oil, sprinkle with leftover seasoning mix, and toss asparagus gently to coat.
  7. Bake for an additional 15-20 minutes until salmon is cooked through and potatoes are fork-tender.
