  • 2 beef tenderloins
  • 1/2 orange (cut in quarters)
  • 1/4 cup orange juice
  • 5 cloves garlic
  • 1/4 cup smoked paprika
  • 2 tablespoons olive oil
  • 6 tablespoons kosher salt
  • For the glaze: 1 orange (zested)
  • 1/4 cup orange marmalade
  • 2 tablespoons brown sugar
  • 1/2 teaspoon freshly chopped rosemary

Instructions

  1. In a blender, puree the orange quarters, garlic, smoked paprika, olive oil, and salt to make the marinade. Rub generously over the beef tenderloins and refrigerate for at least 8 hours.
  2. Allow tenderloins to reach room temperature before cooking (about an hour).
  3. Prepare the glaze by simmering the zest, juice, marmalade, brown sugar, rosemary, and cinnamon in a saucepan until thickened (about 10 minutes).
  4. Preheat oven to 450°F. Roast marinated tenderloins uncovered for 5 minutes.
  5. Toss halved Yukon Gold potatoes and Brussels sprouts with olive oil and seasonings; place around tenderloins.
  6. Lower oven temperature to 350°F and cook for another 10 minutes.
  7. Brush glaze over tenderloins; roast for an additional 10-15 minutes until internal temperature reaches 145°F.
  8. Let rest for at least 15 minutes before slicing.
