  • 1 pound sweet cherry tomatoes
  • 8 ounces ricotta cheese
  • 1 crusty bread loaf
  • 1 bunch fresh basil
  • 3 tablespoons olive oil (divided)
  • 4 minced garlic cloves (divided)
  • Balsamic glaze
  • Salt
  • Black pepper

Instructions

  1. Preheat your oven to 400°F.
  2. In a baking dish, toss cherry tomatoes with 1 tablespoon olive oil, 2 minced garlic cloves, salt, and pepper. Roast for about 20 minutes until bursting.
  3. Blend ricotta cheese, remaining garlic clove, 1 tablespoon olive oil, half of the basil leaves, salt, and pepper until smooth. Refrigerate.
  4. Slice the bread into half-inch slices. Brush both sides with a mixture of 1 tablespoon olive oil and remaining garlic clove; sprinkle with salt and pepper. Bake for 10-12 minutes until golden.
  5. Assemble by spreading ricotta on toasted bread slices, topping each with roasted tomatoes and additional basil, then drizzle with balsamic glaze.
