  • ½ lb sushi-grade ahi tuna
  • 3 scallions (thinly sliced)
  • ½ cup Kewpie mayonnaise
  • ¼ cup Sriracha
  • ½ cup grapeseed oil (or other neutral oil)
  • 1 jalapeño (thinly sliced, for serving)
  • black sesame seeds (for serving)

Instructions

  1. Cook sushi rice according to package instructions. Rinse until water runs clear.
  2. In a saucepan, heat rice vinegar, sugar, and salt until dissolved. Fold into cooked rice gently.
  3. Chill seasoned rice in a lined container until firm, then cut into rectangles.
