  • 1 gala apple (diced)
  • ½ cup celery (diced)
  • ½ cup fresh parsley (chopped)
  • ½ cup candied walnuts
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 garlic clove (minced)
  • ¼ teaspoon ground allspice
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions

  1. Cook the quinoa: In a medium saucepan, bring vegetable broth to a boil. Add rinsed quinoa and dried cranberries. Cover and remove from heat; let sit for 15 minutes. Fluff with a fork and transfer to a large bowl.
