  • 1 1/2 cups pumpkin puree
  • 1 teaspoon vanilla
  • 2 eggs
  • 1/4 cup milk
  • 1 3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 3/4 teaspoon salt
  • 1/2 cup granulated sugar (for topping)
  • 1 teaspoon cinnamon (for topping)
  • 1 tablespoon unsalted butter, melted (for topping)
  • 3/4 cup heavy cream (for filling)
  • 8 ounces cream cheese, softened (for filling)
  • 1/4 cup maple syrup (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, whisk together vegetable oil, granulated sugar, light brown sugar, pumpkin puree, eggs, and milk until well combined.
  3. In another bowl, sift together all-purpose flour, baking soda, ground cinnamon, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until just combined; do not overmix.
  5. Pour the batter into the prepared muffin tin until each cup is three-quarters full.
  6. For the topping, mix granulated sugar with cinnamon and sprinkle generously on each muffin before baking.
  7. Bake for 20-24 minutes or until lightly golden and a toothpick comes out clean.
  8. While cooling, whip heavy cream until stiff peaks form and beat softened cream cheese until smooth; fold in whipped cream and maple syrup to taste for filling.
  9. Once cooled, cut out a cone shape from the center of each muffin and fill generously with maple cream cheese mixture.
