  • 600 g Hokkaido pumpkin flesh
  • 300 g day-old bread
  • 1 onion
  • ½ bunch parsley
  • 2 tbsp pumpkin seeds
  • 1 tbsp butter
  • 2 eggs (size M)
  • Salt and pepper to taste
  • 4 tbsp flour (adjust as needed)
  • 2 tbsp semolina
  • 40 g Parmesan cheese

Instructions

  1. Prepare the pumpkin by washing and cutting it into cubes. Boil in salted water until tender.
  2. While the pumpkin cooks, finely dice day-old bread and place it in a bowl.
  3. Sauté diced onion in butter until translucent and mix with pumpkin, bread, parsley, eggs, flour, and semolina once cooled.
  4. Season with salt and pepper; knead until smooth. Chill for about 30 minutes.
  5. Shape the mixture into about 12 dumplings using wet hands.
  6. Gently simmer dumplings in salted water for 10–15 minutes until they float. Optionally pan-fry until golden brown before serving.
