  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup canned pumpkin puree
  • 3 ½ cups brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • ½ cup all-purpose flour
  • ¼ cup rolled oats
  • ¼ cup unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press this mixture firmly into the bottom of your prepared pan.
  3. In a large bowl, beat the softened cream cheese until smooth. Then add in the pumpkin puree, brown sugar, eggs, vanilla extract, and pumpkin pie spice. Mix until everything is well combined. Pour this mixture over your crust.
  4. In another bowl, combine flour, rolled oats, cold cubed butter, and brown sugar. Mix until crumbly. Sprinkle this streusel evenly over the cheesecake layer.
  5. Bake for about 45 minutes or until the center is set. Let it cool completely at room temperature before refrigerating for at least two hours.
